(Due to the pics involved, I kinda want this as a separate thread. Besides, nobody reads the cooking thread. If no can do, well that just sucks for me.)

Yes, that's right. Only a few days after I finished eating the whole thing did I get not-lazy enough to write this all down. Today, we will be baking a pumpkin cheesecake, in spirit of Halloween and late Thanksgiving (superior Canadian Thanksgiving, silly inferior Americans).

Now, let's get started, shall we?



The ingredients this time around all less common to find around the house, so a trip to the grocery will probably be necessary. Oh well.

Crust:
1 1/4 cup graham cracker crumbs
1/3 cup melted margarine
1/4 cup sugar

Filling:
3 packages (bricks) of cream cheese
1 can sweetened condensed milk (NOT evaporated milk)
1/4 cup lemon juice
1 1/2 cup pumpkin puree
1 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
1/8 tsp cloves
3 eggs




(Note, not all the ingredients in the above picture are needed, and there are some missing. Whoops.)

In a bowl, mix the graham crumbs, sugar and butter.


Mix it up until it all looks the same.


For this recipe, you will need a springform pan. If you don't have one, go get one. Can't really make a cheesecake without one.


Press it onto the bottom of the springform pan (left ungreased), then refrigerate it.


Plop the cream cheese into a bowl, mash it together with a fork to soften it, then blend it until creamy.

You can't overblend cream cheese so go wild.

Pour in the condensed milk and lemon juice, blend that in too.


Blend in the pumpkin puree and spices next. At this point you should start thinking making cheesecake is pretty easy.
Toss in the eggs, but only blend it just until it's all combined. You can easily overbeat cheesecakes and it'll
end up all dense instead of soft and nice if you aren't careful.


Take the springform pan back out and pour in the filling.



Preheat the oven to 300F.
In the meantime prepare for the water bath. Get out a baking sheet or some other baking thing with raised sides that you can fit the pan on.
Take a crapload of aluminum foil and wrap the bottom of the pan in it, cover about halfway up the pan and shiny side faces the pan. You're going to be soaking the pan in hot water, so make sure no water's getting in. I actually messed this cheesecake up because water seeped in the pan. The crust got all mushy, there was grease all over the bottom of the pan and certain parts tasted distinctly like metal. Disgusting.



Place the pan on the baking sheet, and boil some water. Put the sheet+pan in the oven, and pour hot water all around it.



You only really need enough water to line the bottom; you don't need a huge amount. Do make sure to fill if you run dry though.

I'd say cook it for 50-65 minutes, but 60 is very good and the least amount of poking you need to do the better.
Speaking of poking, you're technically supposed to check for doneness by sticking a knife into the middle, and not a toothpick like other baked stuff. For this cheesecake, this is a very bad idea. Because of the pumpkin, your knife probably won't come out dry until a while after it's done, and the knife wound will split into a huge crack as mine did. I wouldn't even bother checking for doneness.

Once the cake is done, turn off the oven, open the oven door and leave it there for an hour. This makes sure that it cools down very slowly, so it doesn't split open.



Chill overnight. Before you take off the springform sides, heat a knife with hot water and cut around the edges, because it may otherwise stick to the sides. After that, you can help yourself!

What I don't understand (cooking noob here), why the water?
Steaming ensures the oven moisture stays high (which keeps the cake springy) and cooks the cake all the way through instead of mainly cooking the outside.
